This provided an interesting limitation - there aren't many sets that have lots of hinges, and those that do tend to be monochromatic, like Notre Dame.
The two most perfect sets for this that are still in production, to my eyes, are Shopping Street (11371-1) and Old Town 15th Anniversary (71861-1). In addition to the hinges, they have a wide variety of fun parts and plenty of structural parts sufficient to provide adequate strength. No additional parts are required.
